OAXACA'S MEZCAL REGION - 5/2/13

Alipus Mezcal's are 100% Agave produced in Oaxaca's famous region known for small family distilleries. The Agaves are wood roasted in palengues (below ground ovens) with the juice extracted by the tahona method. Fermentation occurs in open wooden vats using native yeasts. Distillation occurs in small copper pot stills (wood fired).  You can't get more traditional than this.


There are currently four distilleries that have joined to form the Alipus Mezcal family.  Three of these have been approved for export to the U.S. and are available through Origin Beverage.

Slow Hand Organic White Whiskey has arrived. The Greenbar collective s-l-o-w-l-y double ferments their mash for 7-10 days in temperature controlled tanks (instead of the usual 3 days in hot, open fermenters) using ale and champagne yeasts.

NIKKA JAPANESE WHISKY NOW IN THE U.S. - 2/28/13

Made from the blending of the two distilleries of Yoichi and Miyagikyo, this whisky was the pride of its creator Mastaka Taketsuru, founder of Nikka and father of Japanese whisky.

The Yoichi Distillery is located 50 kilometers west of Sapporo on the island of Hokkaido. It combines tradition with an aesthetic that only the Japanese can achieve. Yoichi has an underground water source that is filtered through peat; the best water there is for whisky production.

Miyagikyo is located on the island of Honshu. Built in the foothills of the Miyagi prefecture, the site was chosen for its pure air and high humidity levels, ideal for ageing in barrels.
